Easy Way To Cook Spicy Masala Baby Potatoes

Baby potatoes 500g
Cumin seeds 1tsp
Onion seeds ½ tsp
Coriander seeds 1tsp
Aniseed 1tsp
Dry mango powder 1tsp
Black pepper powder ½ tsp
Chilli flakes 1tsp
Salt to taste
Oil 3tbsp

Parboil the baby potatoes. Refresh in cold water and peel the potatoes. Dry roast the coriander seeds, cumin seeds, onion seeds and aniseeds till light brown in colour. Grind to a fine powder. Heat the oil in a pan. Add the potatoes to the hot oil and toss well till all the potatoes are covered with oil. Reduce the flame and saute till the potatoes turn a golden color taking care to flip the potatoes occasionally. Mix the ground spices, dry mango powder, salt, and coriander powder well and add to the potatoes. Toss well to coat all the potatoes. Remove from fire. Garnish with chopped mint leaves and serve.
