Yummy and Healthy Mango oats pudding

50 gm (4 tbsp) yellow butter
75 gm (½ cup) castor sugar
½ tsp star anise powder or 1 tsp vanilla essence
1 cup fresh mango puree (1 large mango)
1 cup oats – spread and roast for 3 minutes in the microwave
½ tsp baking powder
½ cup fresh bread crumbs – (made by grinding 2 bread slices)
1 tsp brown sugar

Directions 1.Beat butter with sugar till fluffy.
2.Add star anise powder and beat again.
3.Add 1 cup puree and mix well.
4.Add 1 cup roasted oats.
5.Sprinkle ½ tsp baking powder. Mix well.
6.Add 1 cup fresh bread crumbs. Add colour. Beat to mix well.
7.Spread in a greased 8″ dish. Sprinkle 1 tsp brown sugar. Microwave for 4 minutes without covering. Give 5 minutes of standing time.
8.Serve warm or cold, according to the season, decorated with mango balls, mint and chopped almonds.
